Grilled Chicken with Greek Yoghurt

Introduction

Chicken breast is used in this recipe, but other chicken portions work equally well. The yoghurt is used not only for flavour, but also to tenderize the meat, making it more succulent and juicy. Ingredients

    900g chicken breast
    3 garlic cloves, crushed
    salt and ground black pepper
    1 tsp paprika
    1 tsp ground cinnamon
    pinch cayenne pepper
    freshly squeezed juice of 1 lemon
    4 tbsp olive oil
    8 tbsp greek yoghurt

Directions

Serves 6

Place chicken in large, shallow dish. In medium-sized bowl, combine the garlic, salt and pepper, paprika, cinnamon, cayenne, lemon juice, oil and greek yoghurt.

Pour the marinade over the chicken, stirring to coat evenly. Cover and leave to marinate in refrigerator 2-3 hours or overnight.

Season the chicken legs again with plenty of salt and pepper. Place on an oiled grill rack under preheated grill and cook for 20-40 (depending on cut of chicken used) or until crisp and golden on the outside and cooked through, turning frequently during cooking.

Serve with lemon wedges.

  • Very flavorful, but as i started making them I had two different recipes in my head. Made these as grilled tenders instead of breasts! LOL! They were good but a little overdone! next time I'll do it right! - 7/11/10
