Spinach and cheese eggs

Ingredients

2 eggs, beaten
2 cups coarsely chopped fresh spinach
1/3 cup shredded cheddar cheese
salt and pepper (optional)
cooking spray
Directions
Spray cooking spray on to a medium skillet, turn the heat to medium.
Toss your spinach into the pan, let cook for about half a minute.
Pour the eggs over the spinach and mix together.
Cook until the eggs are no longer runny. Remove from heat.
Sprinkle cheese on top and cover until the cheese melts. Enjoy!!
This is great with fresh tomatoes diced on top, diced ham thrown in with the eggs (or any other meat you like), zucchini added with the spinach, pepper jack in place of cheddar...etc. Be creative and have fun!
Makes 1-2 servings.
