Strawberry-Rhubarb Pie (Good Housekeeping Healthy Makeover)

Ingredients

    Oranges, 1 small (2-3/8" dia)
    Strawberries, fresh, 454 grams
    Granulated Sugar, .25 cup
    Argo Cornstarch, 1 tbsp, 1 serving
    Old Fashioned Quaker Oatmeal- Plain (1/2 cup dry), 1 serving
    Brown Sugar, .33 cup, packed
    *Whole Wheat Flour, 0.25 cup
    Land O Lakes, Salted Butter, 1 Tbsp, 3 serving

Directions

Makes 8 servings
1. Preheat oven to 375F. Grate peel from orange and divide between two large bowls. Squeeze 1/4 of the juice from the orange into one of the bowls.
2. In the bowl containing the orange peel, combine strawberries, rhubarb, and white sugar until well mixed.
3. Add cornstarch to the bowl with the orange juice and mix thoroughly.
4. Stir fruit mixture into cornstarch mixture until well combined. Pour into a 9" glass or ceramic pie plate, spreading evenly,
5. In the bowl containing the orange peel, combine the oatmeal, brown sugar, flour, and a pinch of salt. With a pastry blender or fingertips, blend mixture until it fporms coarse crumbs (with a few pea-sized pieces remaining).
4. Sprinkle oat mixture evenly over strawberry mixture. Place pie plate on a foil-line cookie sheet and bake 45 minutes, or until topping is golden brown and fruit is hot and bubbling.
5. Cool on wire rack until filling is set but still warm. Serve warm.
