Pumpkin Oat Muffins

Ingredients

    1/4 cup unsweetened applesauce
    3/4 cup unpacked brown sugar
    1 egg white
    1 cup nonfat buttermilk (or 1 cup water + 4 Tbl buttermilk powder)
    1/2 tsp vanilla extract

    1 cup oats
    1 cup whole wheat flour (soft wheat or pastry flour, preferred for higher rise)
    1 Tbl. baking powder
    1 Tbl. cinnamon (more or less, to taste)
    1 cup canned pumpkin
    1/2 cup chopped walnuts

Directions

Preheat oven to 400 degrees F.
Grease or spray muffin pan. Makes about 14 regular-size muffins.

1- In medium to large bowl, combine flour, baking powder, buttermilk powder, cinnamon, brown sugar, and oats.

2- In another bowl, combine applesauce, egg white, water (or buttermilk), and vanilla. Add pumpkin, blend together and add to dry ingredients. Stir just until blended. Add walnuts.

3- Spoon into muffin pan. Bake at 400 degrees F. for about 25 minutes until toothpick inserted in the middle of one of the center muffins comes out clean. These are very moist muffins!
