Oven Roasted Halibut

Introduction

This a delicious, simple meal. To add an extra punch of flavor drizzle some parsley puree on the plate to dip the fish in. The parsley puree makes this dish refreshing. This a delicious, simple meal. Ingredients

    Preferably 1-12oz piece of skin on halibut the same thickness throughout, but 2 fillets the same thickness through out and to one another is fine too. Washed and dried thoroughly.
    Salt
    Pepper
    Good olive oil (EVOO)

Directions

Preheat oven to 375

Heat pan to hot
Add 2 tsp. EVOO, make it a Tbsp if you like

While heating up pan season fish with salt and pepper
When pan is hot place fish skin side down in to pan
Cook, undisturbed, for 3 min.
Flip and cook another 1 min then put in oven.
Depending on thickness of fish cook another 7-10 min.

Pull fish out and press lightly to check firmness/doneness. It should feel firm, but with some give. Your fish should not be flaky otherwise it is overcooked, according to Julia Child.

I added a parsley puree to the plate consisting of
1 C. parsley
1/2 clove garlic
1 tsp. salt and cracked blk. pepper
1/2 lemon
1/4 C. EVOO
blended to puree
