Introduction

I saw this recipe in the "healthy cooking magazine" and it was really good. I actually ended up just eating with spinach without the pita bread...mmmmm. Number of Servings: 6

Ingredients

    1 lb Lean ground beef
    1 small sweet red pepper, chopped
    2 green onions, chopped
    1 can (16oz) kidney beans, rinsed and drained
    3/4 cup frozen corn
    2/3 cup taco sauce
    1/2 tsp. onion powder
    1/4 tsp. paprika
    1/4 tsp. pepper
    3 whole wheat pita breads (6in), halved
    6 Tbsp. shredded reduced-fat cheddar cheese

Directions

This makes 6 servings. Each serving contains i filled pita half

1.In a large pan, cook beef, onion and red pepper over medium heat until meat turns brown ( no longer pink)

2. Drain and stir in corn taco sauce, beans and seasonings while heating through.

3. Take 3/4 cup beef mixture into each pita half, sprinkle with cheese.

Can serve with a side of salad, avocado and/or extra taco sauce
