KM E2 NYTimes Veggie Burgers

Number of Servings: 8

Ingredients

    Beans, black, 1.5 cup
    *Tomatoes, red, ripe, canned, whole, no salt added, 1 can
    Garlic, 1 clove
    *roasted red bell pepper, 2 oz
    *Carrot - raw, chopped, 1 cup
    *Onion powder, 1 tsp
    Scallions, raw, 2 medium, chopped
    Cilantro, raw, 8 tbsp
    *Quaker Oats - Quick 1 Minute - Dry, 2 cup
    Yellow Sweet Corn, Canned, .5 cup

Directions

Preheat oven to 450. Process everything except oats and corn. Remove to a large bowl and add oats and corn. Form into 8 patties and bake for 5 minutes on each side. Then broil for 2 minutes. Alternatively, saute or burgers 5-7 minutes in each side.
