This is a fantastic snack or side if you're looking for something low fat and a little on the salty side. However, if you are on a low sodium diet, this may not be the snack for you. Ingredients

    1~ Quaker White Cheddar Rice Cake
    1/2 cup~ Fat Free Cottage Cheese
    2 tbsp.~ Green Onion (Chopped)
    1~ Tomato Slice
    1 tsp.~ Reduced Fat Parmesan Cheese
    Dash~ Salt
    Dash~ Black Pepper

Directions

First, mix the chopped onion and cottage cheese together. Spread the mixture evenly onto your rice cake and top with tomato. Sprinkle parmesan, salt, and pepper on top.
