Low Carb Chicken Salad for 2 NO Mayo

Introduction

I made this the other day for lunch and Oh was it Yummy. I place spoonfuls on a leaf of lettuce and had a few whole wheat crackers on the side. What a filling and tasteful Diabetic Lunch.
** use Red Wine Vinegar. not cider vinegar.(couldn't find red wine vinegar on add ingred. page)
GREAT for an outdoor picnic...

Ingredients

    8 oz. roasted chicken cubed
    1 cup seedless grapes (any color) cut in half
    2 stalks celery cut in bite size pcs.
    1/2 cup snap pea pods cut in bite size pcs.
    1/4 cup Red Wine Vinegar
    3 tlb Olive Oil
    *black pepper to taste
    NO Salt needed

Directions

After prepping all the food, mix all in a bowl. That's It ! ! !
Can make a little ahead of time to let the oil and vinegar marinate the chicken and veggies.
Can add fresh herbs...chives, parsley,You can Italianfy it with basil and oregano.
