5 cups zuchini diced 1 large yellow pepper diced 1 large red pepper diced 2 cups celery diced 1 cup cauliflower chopped 2 tomatoes chopped
Combine all of the diced vegetables in an electric frying pan or a wok. Cook for 20 minutes or until tender. Season with your choice of seasonings like garlic powder, coriander, basil etc. Avoid using garlic salt, onion salt etc. in order to keep sodium intake low. Serves 5, approx 1 1/3 cup per serving.
