1 tbs olive oil
1 onion, sliced
1 leek, sliced
1 stick celery
250g stewing beef
Vegetable stock/ or beef stock
2 medium potatoes
100ml hemp milk
1 tsp rice flour
Handful of watercress and spinach
Soften onion, leek and celery in olive oil. Cook on lowest heat with lid on for 15 minutes.
Tip in beef and stock. Flavour with rosemary, mustard and nutmeg. Let simmer for an hour or more â€“ until beef is tender.
Peel and quarter potatoes, cook until just done (4 mins in microwave). Stir into pie filling.
Spoon into pie dish and stop with short crust pastry.
