Better for You Tater Tot Caserole

Introduction

I saw a recipe like this but knew the nutritional info was off, so I decided to make my own version. I saw a recipe like this but knew the nutritional info was off, so I decided to make my own version.
Number of Servings: 6

Ingredients

    1 small onion - chopped
    1 small bell pepper - chopped
    2 tbsp olive oil
    1 lb ground turkey
    2 tbsp crushed red pepper flakes
    1 pkg Onion Soup Mix
    3 basil leaves
    1 can reduced fat cream of mushroom soup
    25 frozen tater tots
    a light sprinkle of cheese
    2 green onion stalks - slivered

Directions

Preheat oven to 350 degrees F.
Saute the onions and green peppers until the onions are just about translucent and set in the 9x9 casserole dish.
Next brown the turkey, cooking all the way through. During this time add the package of onion mix and crushed red peppers to taste. ( I also added some basil from the garden but this isn't required) When meat is done add it also to the baking dish.
Put the cream of mushroom soup into the baking dish and mix it all together really well.
Next add the tater tots in a chess board type fashion. It looks pretty darn cute!
Then add a light sprinkle of cheese (no more than an 1/8 cup is needed.
Lastly using scissors thinly cut some green onion evenly over the top (this was also from the garden and can be skipped if needed)
