Modified Magic Crust Quiche

Number of Servings: 4

Ingredients

    2 whole eggs
    3 egg whites
    2 cups 2% milk
    0.5 cup plain flour (white)
    1.5 cups (150g) reduced fat grated cheese
    0.5 onion, diced
    5 mushrooms, sliced
    0.1 cup frozen corn
    0.2 cup frozen peas
    0.2 cup sliced red capsicum

Directions

Blend eggs, milk & flour together until smooth.

Add other ingredients & pulse to combine.

Pour into a greased or lined 9" pie dish. Cook at 180C for 50 to 60 mins.
