Introduction

This is a really good high protein low fat breakfast or pre or post work out meal with a little kick. This is my favorite breakfast and I eat 1 slice natural whole wheat toas and plain non fat greek yogurt with fresh strawberries and blueberries. Yummy! Number of Servings: 1

Ingredients

    1 large egg with yolk
    3-4 egg whites
    1 handlfull of chopped kale
    1/4 C mushroom chopped
    1/4 oz feta or mozzerella cheese
    1/2 tsp cayenne pepper
    1/2 tsp fresh ground black pepper
    dash of sea salt
    extra virgin olive oil spry

Directions

Heat a skillet on medium heat, spry with extra virgin olilve oil spry. Add whole egg and egg whites, splash of milk ( I use almond milk), scramble. Add remaining ingredients except kale and cheese. When eggs are almost done add the kale spry with a little more evoo and cook till kale is limp and bright green, add cheese till melted and take off heat and put on plate.
OPTIONAL: Sometimes I add left over cooked meat to eggs or deli meat like ham or turkey for extra protein!
( I eat this with slice of whole wheat bread, fresh fruit and greek yogurt)
