Introduction

This is delicious and low fat. When I get homesick for Louisiana and donít want to go to all the trouble of gumbo, this always soothes the soul. This is delicious and low fat. When I get homesick for Louisiana and donít want to go to all the trouble of gumbo, this always soothes the soul.
Number of Servings: 5

Ingredients

    1 1/2 lbs shrimp
    1 (6 oz) can tomato sauce
    1 cup chopped onion
    1/2 large bell pepper, chopped
    1 cup diced tomatoes and green chili peppers (Rotel)
    2 cloves garlic (minced)
    1 cup brown rice
    1 tbsp butter or olive oil
    1 tbsp flour
    1 tbsp seasoned salt or your favorite creole seasonings
    salt and pepper to taste

Directions

Sautť onions, bell pepper, and garlic in butter or olive oil. Cook unil soff. Stir in shrimp. Add diced tomatoes and green chili peppers, tomato sauce, and seasoned salt. Stir. Simmer 20-25 minutes. Add flour to thicken. Stir well.

Prepare rice per package instructions and serve over rice.
