Rhubarb Blueberry Pie Filling - Sweet Epiphany

Introduction

Great basic rhubarb pie filling. Can substitute 1c. blueberries for more rhubarb or pretty much any other berry. Great basic rhubarb pie filling. Can substitute 1c. blueberries for more rhubarb or pretty much any other berry.

Ingredients

    3c. Rhubarb chopped - fresh preferred
    1c. Blueberries, or other - frozen or fresh
    1 1/3 c. Sugar
    6 Tbsp Flour
    1 tsp Salt

Directions

Fills 1 - 9" double crust pie. Makes 8 servings.

Mix sugar, flour, & salt. Put 1/4 of mixture in bottom of pie crust. Place berries in crust and top with remaining 3/4 of sugar mixture. Place pie crust on top, pinch edges.

Bake @ 450 for 15 minutes. Lower temp to 350 and bake for 40-45 min. or until fruit is soft and crust is golden brown.

Serve warm or cold. Great with ice cream.
