Vegetarian dirty rice

Introduction

A low GI high-carb meal with plenty of wholegrain goodness.

I like this recipe with sweet potato, but other (lower-calorie) vegetables like carrots can be substituted.

I like this recipe with sweet potato, but other (lower-calorie) vegetables like carrots can be substituted.

Number of Servings: 3

Ingredients

    1 packet Sunrice brown basmati rice in 90 seconds or 250g cooked brown rice
    1 onion, sliced
    2 cloves garlic
    0.5 tsp ground cumin
    1 tsp ground coriander
    2 cups sweet potato, diced into 1.5 cm cubes
    1tbsp dark soy sauce
    2 tsp raw / brown sugar

Directions

Coat the sweet potato in half of the olive oil and roast until cooked. Saute the onion and garlic in the remaining olive oil until soft. Add spices and saute until fragrant. Add rice and cook until warmed. Add potato, soy sauce and sugar.

Can be served with a fried egg on top for added protein.
