Introduction

This recipe is from the Discovery of a Continent Cookbook by Marcus Samuelsson. It is recommended to be paired with a tomato sauce also in the book, but we typically pair it with homemade Tzatziki, a cucumber yogurt sauce, along with wheat pita and various fresh veggies. Ingredients

    1 cup raw chickpeas, soaked for 24 hours & drained
    1 small onion, quartered
    3 garlic cloves, peeled & lightly crushed
    1 tsp coriander, ground
    1 Tbsp cumin, ground
    1 tsp chili powder
    1/2 cup parsley, chopped
    juice of 1 lemon
    1/4 cup cornmeal
    2 Tbsp olive oil

Directions

In a food processor, blend chickpeas, onion, garlic, coriander, cumin, chili powder, parsley and lemon juice.

Use a tablespoon to scoop and roll small patties (mix in an egg if they are too crumbly). Roll each lightly in cornmeal.

Heat olive oil on medium-high in a heavy skillet & place patties in skillet. Cook approximately 3-4 minutes on each side.

The original recipe called for deep-frying the patties, but I find that you can cook them in much less oil for equally delicious flavor. The recipe makes approximately 12 patties, and this nutritional info equals one patty.
