Susan's Greek Pasta Salad

Number of Servings: 14

Ingredients

    1 cup dry orzo pasta - cooked to package directions to yield 2 cups cooked pasta
    2 cups mixed colors sweet pepper diced
    1 cup red onion diced
    1 cup cucumber diced
    1 cup parsley (or a combination of mixed fresh herbs-like basil, marjoram, oregano)
    5 oz fat free feta cheese
    juice of 1 to 2 lemons
    1/3 cup olive oil
    salt and pepper to taste

Directions

Cook pasta according to package directions. While pasta cooks, chop and dice veggies, herbs and cheese. Toss all ingredients together. Add lemon juice and olive oil, S&P to taste. Allow to marinate in fridge for a couple of hours before serving. Makes 14 1/2 cup servings.
