Introduction

This is a great quick easy recipe you can prepare in your microwave at home or at work. This is a great quick easy recipe you can prepare in your microwave at home or at work.

Ingredients

    Egg, fresh, 1 large
    Egg white, 1 serving
    Spinach, fresh, .5 cup chopped
    Mushrooms, fresh, .5 cup, pieces or slices, chopped
    *Sabra Tabouli, 2 oz (approximately 2 Tbs)
    Great Value Manzanilla Green Olives (Pimiento Stuffed ) 5 Olives, 2 each (chopped)

Directions

chop spinach, mushrooms and olives into large pieces; add to tabouli and mix. Place in microwave for 45 seconds to heat through. While veggies are cooking mix eggs in microwave save bowl. Add veggie mixture to eggs and stir. Place in Microwave and for 1.25 seconds. Half way through the cooking time stir egg mixture and add pepper and salt (optional). Place back in microwave and finish cooking. Stir and serve. ENJOY!!! (4 Weight Watcher Points)
