4 Yellow Peppers (Bell Peppers)
1 lb. Ground Turkey
1 cup frozen sweet corn
1 onion chopped
3/4 cup Kraft minute whole grain Brown Rice
1 can Red Ripe chopped Tomatoes
6 oz. Egg Whites
1 1/2 tbsp. Chili Powder
1 tbsp. Oregano
1 tsp. Black Pepper
Cut the tops off the Peppers, remove seeds, rinse and set aside.
Mix the remaining ingredients until they are well blended. Add this mixture to the yellow peppers, pack as tight as they will allow
Place stuffed peppers into a baking dish, add 1 in. of water. Cover with foil and place in oven.
Bake for 90 min. or until meat thermometer indicates they are done.
