No Sugar Added Chocolate Apricot Pecan Cookies

Introduction

These cookies do not have any flour or added sugar (but the bananas, apricots and milk have natural sugar in them, so they are not sugar free). Substitute soy or almond milk for the dairy to make these vegan. Ingredients

    3 bananas, mashed
    2 cups uncooked quick-cooking oats
    1/2 cup dried apricots, chopped
    1/2 cup toasted pecan pieces, chopped
    1/2 cup dutch process unsweetened cocoa powder
    1/3 cup coconut oil, melted
    1/3 cup 2% milk (substitute with soy milk to make these vegan)
    1 tsp vanilla extract

Directions

In a large mixing bowl, mix all ingredients together, beating well. Let mixture set for 5 minutes for oats to absorb moisture. Drop by teaspoonfuls onto ungreased cookie sheets. Bake at 350 degrees for 15 to 20 minutes. Let stand for 1 minute before removing from cookie sheet. Remove to wire racks to cool.


Note: Use medium to large ripe bananas. Using small or barely ripe bananas will make your cookies dry. If your bananas are small, use 3 1/2 to 4.
