Number of Servings: 4

Ingredients

    1 head garlic (about 9-12 cloves)
    2/3 cup sodium-reduced chicken broth
    1/4 cup fresh lemon juice
    2 tsp cornstarch
    4 chicken breast halves, boneless and skinless (100g each)
    sprin kle of salt and pepper

Directions

Makes 4 servings

Wrap garlic head in foil and bake in 375 F oven until tender (package will feel soft), about 45 minutes. Let stand until cool enough to handle, cut off top and squeeze garlic pulp into a bowl, mash until smooth.

While waiting for the garlic to cool, preheat broiler. Sprinkle chicken breasts with salt and pepper and broil until done - 8-10 minutes per side. If you use a meat thermometer, it should be at 165 F for poultry meat to be done.

While chicken is cooking, whisk lemon juice and cornstarch in a small pot. Add roasted garlic and salt to taste. Bring to boil and boil until sauce is lightly thickened, about 1 minute.

Place chicken breasts on platter and spoon sauce over them.
