Sweet Potato Queens Casserole (reduced topping)

Introduction

This is a great sweet potato casserole made with a thin layer of topping. The dish is very sweet without using too much sugar! This is a great sweet potato casserole made with a thin layer of topping. The dish is very sweet without using too much sugar!
Number of Servings: 8

Ingredients

    Sweet Potatoes:
    3 cups Sweet Potato (about 3 lbs)
    2 tbsp Margarine
    2 tsp Vanilla

    Topping:
    1/4 cup Brown Sugar
    1/4 cup Margarine
    2 tsp Flour
    1/2 cup Pecans

Directions

Preheat oven to 350.

Boil the sweet potatoes with the skins on. Cool until you can handle them, peel and place in a large bowl (can do a day ahead). Add 3 tbsp margarine and vanilla, mix together. Grease dish and put sweet potato mixture into it.

Mix all topping ingredients together, except pecans. Mix in pecans and spread over sweet potato mixture. Bake 30 minutes.
