Dollbabe56's Basil Pesto

Submitted by: DOLLBABE56

Introduction

I found this in an old cookbook that I love. Although this is not low calorie, you get 4 servings out of it. Serve this tossed with hot whole wheat pasta! yummm.... You can use a little in soup, or rub all over chicken before roasting it. I found this in an old cookbook that I love. Although this is not low calorie, you get 4 servings out of it. Ingredients

1 or more garlic cloves (I omit this due to acid reflux)
    3 Tbls. butter
    1/4 tsp. ground white pepper
    pinch of freshly grated nutmeg
1/2 cup freshly grated parmesan cheese
2 cups loosely packed basil leaves, stems removed
1/4 cup flat-leaf parsley leaves, stems removed
    1/4 cup extra-virgin olive oil
salt and freshly ground black pepper

Directions

Fit food processor with steel blade and add the garlic (if you are using it), butter, white pepper and nutmeg. With the processor running, add the cheese, then the basil and the parsley. Trickle the oil into the processor until the sauce is smooth. If necessary, add a little hot water to the sauce in order to reach the desired consistency. Then add salt and pepper to taste.
