Dollbabe56's Chicken Soup With Egg Noodles

Number of Servings: 5

Ingredients

    1 lb. boneless, skinless chicken breast
    64 oz. chicken broth
    4 celery stalks, chopped
    1 parsnip, peeled and chopped
    1 onion, chopped
    4 carrots, peeled and chopped
    12 oz. uncooked egg noodles (fine)
    1/2 tsp. ground allspice
    1/4 tsp. black pepper
    1 tsp. salt
    1 tsp. dried dillweed or 1 Tbls. fresh dill

Directions

Makes 5 servings.
Heat chicken broth. Add chicken and cook over medium high heat for 8 - 10 mins. Add veggies and seasonings. Cover and cook 8 mins. Remove chicken, set aside to cool. Add noodles to veggies and simmer until tender. Cut up chicken into bite size pieces and add to soup.

  • My variation on this soup is no dill weed and parsnips. All the other seasonings and veggies, though. Just didn't have parsnips on hand! Good (fairly bland, though) for sick people. - 10/16/13
