4 lbs. Chicken Breast, no skin
1 cup chopped Onions
10 red potatoes - chopped
1/2 of 10 oz. package frozen, sliced Okra
1 8-oz. can Tomato Sauce
1 8-oz. can of Yellow Sweet Corn
1 tsp. Salt - or to taste
2 Tbsp. fresh basil - chopped
1 bay leaf
Place chicken in large (8 qt) pot and cover with water. Add salt. Bring to boil, simmer until tender and meat pulls off bone. Remove chicken to cool. Add remaining ingredients to broth and cook until tender. When chicken is cool, shred (discard bones) and add to the soup. Adjust seasoning to taste.
Sometimes I add fresh basil, thyme, carrots, celery, etc... but this changes the caloric value.
