Ingredients

    Olive Oil, 2 Tbls.
    Garlic Clove, 1 minced
    Chicken Broth, 8 cup
    Onions, raw, 1 cup, chopped
    Celery, raw, 3 stalk, medium (7-1/2" - 8" long) chopped
    Baby Carrots, raw, 10 large chopped
    Red Potato, 2, chopped
    Turnips, 3 medium chopped
    Del Monte Cut Green Beans, 2 cup
    Cannelini Beans, canned, 1.5 cup
    Yellow Sweet Corn, Frozen, 0.5 cup kernels
    1 bay leaf
    1 teaspoon dried thyme
    Spinach, fresh, 1 cup chopped
    Tomato products, Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano, 2 serving

Directions

In large stock pot, heat oil. Add onion, garlic, carrot, and celery. Saute until softened. Add remaining ingredients. Simmer for 30 - 40 minutes.
