4 x 4-minute soft-boiled eggs, peeled
4 slices extra-lean ham
1 x 7g (1/4oz) packet unflavoured gelatine
125ml (4fl oz) cold water
225ml (8fl oz) boiling water
1 drop cognac
Salt and black pepper
First, make up some gelatine.
Sprinkle gelatine flakes into the cold water and allow 1-2 minutes to soften.
Add the hot water and stir until thoroughly dissolved.
Add salt, pepper and one drop of brandy.
Wrap each soft boiled egg in half a slice of ham while it is still warm and place in a dish.
Pour over the liquid gelatine and allow to cool.
