Tomato Rice Salad

Ingredients

    1 cup cooked brown rice
    1 cup tomatos, diced
    1/3 cup sunflower seeds
    2 tbsp chopped green onions
    2 tbsp extra vigin olive oil
    2-3 tbsp lemon juice
    2 tsp fresh mint, chopped
    1/2 tsp salt
    1/2 tsp pepper

Directions

In medium mixing bowl: combine rice, tomato, sunflower seeds, green onion, olive oil, lemon juice, mint, salt and pepper. Gently mix together.

Adjust seasoning as needed.
