Number of Servings: 4

Ingredients

    4 Orange Roughy fillets, thawed
    2 raw eggs, beaten
    1/2 cup bread crumbs
    3 Tbsp. margarine or vegetable oil
    salt & pepper to taste

Directions

1.) Heat large frying pan with 1 Tbsp. of margarine on medium-high.
2.) Coat fillets with raw egg and dredge through plate of bread crumbs. Make sure fillets are even coated on both sides.
3.) When margarine has melted, place two fillets in the pan. Cook 2-3 minutes on each side, or until lightly browned. (Make sure fish is cooked thoroughly.) Salt & pepper fillets while frying.
4.) Repeat with remaining fillets, and use remaining margarine/vegetable oil as needed.
5.) Place cooked fillets on paper towel to remove excess margarine/oil.
