Rhubarb & Pineapple, naturally sweetened

Introduction

Old fashioned stewed rhubarb with all natural ingredients. Inspired by Baked Rhubarb from "The Natural Foods Cookbook", copyright 1961 by Beatrice Trum Hunter Old fashioned stewed rhubarb with all natural ingredients. Number of Servings: 7

Ingredients

    2 C diced rhubarb
    1 19 oz can pineapple in juice (8 oz juice, 11 oz pineapple)
    1/4 cup (30 grams) cooking dates, minced finely

Directions

Boil water and pour over diced pineapple.
Let sit 10 min to reduce oxalic acid. Drain
Place in ceramic dish with pineapple juice and dates.
Reserve pineapple to add later.
Cook in Microwave on med. for 10 min., or stew gently on stovetop for several minutes until soft.
Add pineapple.
Makes about 7 servings of 1/2 cup
