Dr Oz's Spicy Oat-Crusted Chicken with Salsa

Introduction

This recipe was featured on Dr Oz. The only thing changed was that I used three tablespoons of margarine with canola oil instead of 2 tablespoons of margarine and 1 tablespoon of canola oil. Ingredients

    Citrus Salsa:

    3/4 C prepared Salsa
    3/4 C coarsely-chopped orange sections

    Chicken:

    3 T melted Land O lakes light butter with canola oil
    2 t chili powder
    1 t garlic powder
    1 t ground cumin
    3/4 t salt
    1 -1/2 C quick oats, uncooked
    1 egg, lightly beaten
    1 T water
    4 boned and skinned chicken breast halves (about 4-5 oz each)
    Chopped Cilantro (optional)

Directions

In a small bowl, combine salsa and orange sections. Refrigerate covered until serving time.

Heat oven to 375 degrees F. In flat, shallow dish, stir together oil, melted margarine, chili powder, garlic powder cumin and salt. Add oats, stirring until evenly moistened.

In a second flat shallow dish, beat egg and water with fork until frothy, Dip chicken into combined egg and water, then coat completely in seasoned oats. Place chicken on foil-lined baking sheet. Pat any extra oat mixture onto top of chicken.

Bake 30 minutes or until chicken is cooked throat and oat coating is golden brown. Serve with Salsa. Garnish with chopped cilantro, if desired.

  • After reading the positive reviews, perhaps I made this incorrectly because we didn't enjoy this dish. I will say the chicken was moist, but the oat mixture was dry and chalky - I felt like I was eating Mr. Ed's dinner! We ended up scraping it off and just eating the chicken w/ the salsa. - 9/1/10

  • Yum Yum!! The oatmeal and spices are a great combination. Used fresh salsa from the deli. Next time I will omit the orange. I don't think they added anything.The chicken was tender and moist. DH said recipe is definitely a keeper. - 6/18/10
