Ingredients

    Trader Joe's Matcha Green Tea Cake & Baking Mix (1 box)
    Egg substitute (2 eggs' worth)
    Butter OR unsweetened applesauce (1/2 stick worth)
    Fiordifrutta organic fruit spread - lemon (You can get this at Whole Foods)
    Water (2/3 cup)

    NOTE: If you use applesauce instead of butter, cake will be 190 calories per piece instead of 220, and 1 gram of fat instead of 5.

Directions

Preheat oven to 350. Grease 12x9 baking dish well.

Melt butter and mix with egg substitute and water according to mix directions.

Into butter, egg, and water mixture add approximately 12 tablespoons of lemon fruit spread, mixing as thoroughly as possible.

Mix in green tea baking mix.

Pour batter into pan, spreading evenly to fill corners and level cake.

Bake for 35-40 minutes. Cake is done when a toothpick comes out clean from the center.

Makes 12 2"x3" pieces.

The lemon flavor blends nicely with the green tea, producing a not-too-sweet but still very tasty dessert with a Japanese twist.
