Introduction

No oil, no sugar breakfast cookies. An extremely healthy breakfast, even if a bit more like cardboard than the original. No oil, no sugar breakfast cookies. An extremely healthy breakfast, even if a bit more like cardboard than the original.
Number of Servings: 16

Ingredients

    1/2 cup splenda
    1 1/4 cups oats
    2 cups whole wheat flour
    1/2 t salt
    1 1/2 t baking soda
    1/2 t baking powder
    1/2 cup raisins
    1/2 cup craisins
    3 large egg whites
    1/2 cup unsweetened applesauce
    1/4 cup prune or raisin puree
    1 t vanilla extract
    1.5 T water

Directions

Mix all ingredients and plop by LARGE spoonfuls on a pammed cookie sheet and press down to 1/2 inch high. Cookies won't flatten much while cooking, nor will they crisp with extra baking time. Cookies will be chewy, or dry, depending on baking time.
Bake at 350 for 10 minutes.Makes 16 cookies, 116 calories each.
