Ingredients

    1 roasting chicken, cut into pieces
    1/2 t. each salt and pepper
    3 T. Spicy Brown Mustard
    2 large zucchini, sliced
    3 medium carrots, sliced
    1 fennel bulb, sliced
    2 large stalks celery, sliced
    3 T. canola oil (optional)

Directions

Brush chicken pieces with brown mustard, and marinate for at least 1 hour (up to 24 hours). Slice vegetables and place in slow cooker. Brown chicken pieces in hot oil. Place on top of vegetables and sprinkle with salt and pepper. Cook on low 8-10 hours. Or bake in 375 degree oven for 1 to 1.5 hours
