Ingredients

    1 lb bag dry Black-eyed- peas -soak and cook until tender
    (or use canned to make 6 cups) -Drained-
    1 cup chopped onion
    1 cup chopped green pepper
    1 tsp minced garlic
    1 (4 oz) jar diced pimientos -drained
    1/2 cup cider vinegar
    2 Tbs canola oil
    1 1/2 tsp sweetner -any
    1/2 tsp salt
    1/2 tsp black pepper

Directions

Combine all ingredient in a medium bowl; mix well.
Cover an refrigerate at least 12 hours or overnight before serving.
