10-vegetable whole wheat pasta salad

Introduction

This is the perfect dish to take to a potluck when you aren't sure if there are going to be any other healthy meal choices available! This is the perfect dish to take to a potluck when you aren't sure if there are going to be any other healthy meal choices available!
Number of Servings: 16

Ingredients

    16 oz. whole wheat bowtie (or other) pasta
    1 cucumber, peeled, quartered and sliced
    1 c. grape tomatoes, halved
    2 c. broccoli cole slaw
    2 c. sliced mushrooms
    1 small can sliced olives, drained
    1 1/2 c. yellow squash, quartered and sliced
    3 bunches green onions, white and green parts, chopped
    small handful fresh cilantro, chopped
    1 green bell pepper, seeded and diced
    1 c. Brianna's Homestyle Zesty French Dressing
    optional: 1/2 pine nuts or other nuts or seeds

Directions

Prepare pasta according to package instructions. Rinse under cold water and drain. Cut up veggies. Toss pasta, veggies, and dressing together in a 5-qt. bowl. Makes about 16 1-cup servings.

    I make this all the time and mix up the vegetables to whats on hand or in season. It stores well in the refrigerator but tastes better at room temperature. Blueberries, pineapple chunks, or grapes add a nice touch of sweetness as well. - 5/23/10
