Low Calorie Whole Wheat Waffles

Ingredients

1.75 c. of King Arthur Whole Wheat Flour
1/2 tsp. salt
1 tbsp. baking powder
2 extra large egg yolks
2 extra large egg whites
1.75 c. skim milk
1/2 c. Naturally Preferred Organic Applesauce
3 tsp. Splenda Sugar Blend
2 tsp. Pure Vanilla extract
1/4 c. frozen (thawed) wild blueberries
Directions
Stir flour, baking powder, splenda and salt.
In another bowl, beat egg yolks, milk, vanilla and applesauce.
-add to the flour mixture all at once.
Stir mixture until blended.
In a small mixer, beat egg whites until stiff peaks form. Fold the beaten whites into the original mixture. DO NOT OVERMIX.
Pour batter into 4-square waffle iron and sprinkle 1/4 cup of blueberries into the poured batter. Heat until desired consistency.
Waffles can be frozen and reheated for 5 minutes in a 400 degree oven on a cookie sheet.
Serve with light butter or margarine and sugar-free syrup.
Makes 2 four-square waffles and 1 individual waffle square (if using four square waffle iron).
