Introduction

This super simple frittata uses farmer's cheese and Canadian bacon for a lower calorie ham and cheese frittata. This makes a fantastic weekend breakfast/brunch dish or even quick weeknight supper. This super simple frittata uses farmer's cheese and Canadian bacon for a lower calorie ham and cheese frittata. This makes a fantastic weekend breakfast/brunch dish or even quick weeknight supper.
Number of Servings: 4

Ingredients

    5 large eggs, beaten
    3 ounces farmer's cheese
    6 slices Canadian bacon, diced
    2 tablespoons (or to taste) fresh chives, chopped

Directions

Preheat oven to 350 degrees.
Coat a non-stick frying pan with cooking spray.
Pour the beaten eggs in and cook over medium-high heat until edges are just set, about 3-5 minutes.
While the eggs are cooking, add the diced Canadian bacon then crumble the farmer's cheese into the eggs.
Add the chives.
When edges are set and just beginning to brown, transfer the whole pan to the oven.
Bake for 15 minutes or until top is set.
Cool for 2-3 minutes before slicing and serving.
