Tamara's homemade beef barley soup

Introduction

Favorite to use up stocks and canned or frozen items from last year and left over pot roast. Favorite to use up stocks and canned or frozen items from last year and left over pot roast.
Number of Servings: 9

Ingredients

    1 cup celery
    1 cup diced very fine onions
    1 cup carrots

    3 3/4 cups of Beef Stock home prepared
    3 3/4 cups of Turkey or Chicken Stock home prepared
    4 cups of home canned chunk tomatoes
    8 ounces left over pot roast
    1 cup sweet corn frozen from previous season
    1/2 cup pearl barley

Directions

9 2 cup servings

Saute in a very heavy dutch oven the following until softened or slightly transparent
1 cup celery
1 cup diced very fine onions
1 cup carrots

Add
3 3/4 cups of Beef Stock home prepared
3 3/4 cups of Turkey or Chicken Stock home prepared
4 cups of home canned chunk tomatoes
8 ounces left over pot roast
1 cup sweet corn frozen from previous season

Once everything is boiling add in
1/2 cup of pearl barley
Cook for another 20-30 minutes. Testing periodically so as to not over cook the barley.

You can add fresh herbs, salt and pepper to taste. I do this recipe different each time but it is always a big hit. Very fresh tasting!
