Ingredients

For Brownies:
.75 c. egg substitute
1 c. sugar
.5 c. coconut oil
.5 c. applesauce, unsweetened
3 beets roasted and pureed, adding a bit of water if needed to make 15oz.
7 T. cocoa powder
1 T. instant coffee granules
1 (3 ounce) package instant devil's food pudding mix
1 1/2 cups spelt flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1 teaspoon vanilla
For Glaze:
2 tablespoons Land O' Lakes light butter, melted
2 tablespoons unsweetened cocoa powder
2 tablespoons hot water
1 cup confectioners' sugar
1/2 teaspoon vanilla
Directions
For Brownies:
Beat together egg substitute and sugar.
Add oil, applesauce, beets, cocoa, coffee and pudding, mix well.
Blend in vanilla, flour, soda and salt.
Bake in greased and floured 11 x 15 x 1" sheet cake pan for 30 minutes at 375.
For Glaze:
Combine melted butter, cocoa, and hot water.
Blend in confectioners' sugar and vanilla.
Pour or spread on brownies or cake.
Glaze will harden when cool.
**I roast my beets in the oven, unwashed with the tops & tails chopped off, covered tightly in foil at 400*F for 60 minutes. Then I slip off the skins and make sure they are free from dirt.**
