Talk About Good: Rice Supreme

Introduction

Subsititution: Using 2 T of butter instead of a stick, using brown rice instead of white rice, and using fresh mushrooms instead of canned. Subsititution: Using 2 T of butter instead of a stick, using brown rice instead of white rice, and using fresh mushrooms instead of canned.
Number of Servings: 6

Ingredients

    2 cans beef broth (low sodium)
    2T melted butter
    1 c brown rice
    1 C chopped mushrooms

Directions

Mix all ingredients in a 2 quart casserole. Season well with salt and pepper. Bake one hour, covered at 375. Uncover and bake 15 more minutes or until top is nicely browned and rice is cooked. the mushrooms will rice to the top during cooking.

Note: Consomme may be substituted for beef broth.

Makes Approx 4 1/2 cup servings.
