Introduction

Colorful and delicious, this salad is satisfying both in taste and appearance. Colorful and delicious, this salad is satisfying both in taste and appearance.
Number of Servings: 1

Ingredients

    65g romaine lettuce
    50g roasted beets
    50g cherry tomatoes (about 6)
    50g fresh blueberries (about a handful)
    1 oz crumbled goat cheese
    2 oz canned tuna in water (about 1/4 cup)

Directions

I use a kitchen scale to make this salad and it makes preparation very quick and easy. It is so tasty, it needs very little dressing, and only 1 tbsp of your favorite low cal dressing will do.
Simply add ingredients, toss and enjoy. Easy to pack for a car ride, work, the beach, etc.
**To roast beets: Cut off greens, scrub with veggie brush. Wrap loosely with foil and bake in the oven 375 degrees for 1 hr 15 min. Cool to room temp, peel skin and slice into 1/4 inch slices. You can use golden or red beets or a combination of the two. Store in refrigerator.
Optional: Add a few raw pecans for additional flavor if you have room for extra fat for the day!

    I will try this one, but probably change the cheese - I'm not into goat cheese, too much. Someone else said bleu cheese - might try that. I'll try it with the tuna, but may also try shredded turkey. And I love pickled beets - may try those instead of regular. Interesting combination of foods. - 8/20/08

    This is so awsome !!!!!! The only time to make it is roasting the beets but you can it ahead and still make it up in about 5 mins. Never ever thought of putting beets and blueberries together but then again they are both sweet. Thank you very much for coming up with the combo. It's an A+++ - 8/20/08

    That was actually very good. I have to admit, i was a bit of a skeptic at first, but i was pleasantly suprised. Only diff. was i didn't have goat cheese, so i used feta and i used a simple vinagrette dressing. Very pretty salad. - 8/26/08

    I love beets and I had never thought of combining them with berries in a salad. Thanks for sharing this recipe! :-)

    As a Vegetarian I substituted extra-firm tofu to tuna. I also used Olive oil and Raspberry Vinegar for dressing. Yummy! - 8/20/08

    SOUNDS GREAT! I had to laugh when I read the one comment about taking out the tuna and the goat cheese. That would be called a grilled chicken salad like you see everywhere else. LOL! - 5/21/08

  • I think it is sad that someone would rate a recipe badly without even trying it out. Kind of immature and childish. I admit when I saw the list of ingredients, I was hesitant at first but I did try it. I made it without the tuna though since I am a lacto vegetarian. IT WAS DELICIOUS!!!!! - 8/20/08

  • At my age I discovered beets! LOL I also had a salad at a friend's house recently that included blueberries. Now I'm hooked on blueberries and sometimes bits of pineapple in my salads. She used pine nuts but I use slivered almonds. I love a colorful and robust salad. Thank you! - 8/20/08

  • This recipe is a bit high in sodium, but it seems like it's good sodium. The blend of the different ingredients makes this recipe very interesting and tasty. I used French feta because it's milder for eating, used albacore tuna, and the pecans I roasted. Thank you for this delightful recipe! - 5/21/08
