Ingredients

    1/2 bushel (14 qts) tomatoes
    6 cups chopped onion
    4 cups chopped green bell pepper
    13 large garlic gloves (ground)
    3 tbls powdered cumin
    9 tbls red wine vinegar
    9 tbls vegatable oil
    3 jalapeno peppers (up to 8 for more spicy)
    5 yellow peppers without seeds
    5 tbsp salt
    1 tsp pepper
    7 - 4oz cans diced green chiles

Directions

I always leave extra juice out when putting tomatoes into pan - reduces cooking time dramatically. 3-4 hours stirring often. Bottle in Pint Jars.
