Ingredients

    8 medium potatoes: peeled, diced and boiled to firm texture
    2 hard boiled eggs, diced
    4 large or 6 medium celery stalks, finely diced
    1/4 cup Yellow Mustard
    1 medium onion, finely diced
    1/4 cup Sweet Pickle Relish
    1/4 cup Fit n Active light Mayo
    To taste: chili powder, paprika, salt and pepper

Directions

Let eggs and potatoes cool after cooking then mix all ingredients together. Add the seasonings to your taste. Very simple, flavorful recipe.
