Introduction

this is a great soup to make with leftover chicken or those quarter bags of frozen veggies that build up in the freezer. We serve with with tortilla chips on the side an a bit of sour cream. Number of Servings: 5

Ingredients


    * *Tomatoes, red, ripe, canned, with green chilies, 2 cup
    * *Lawry's Taco Seasoning, one pkg
    * Carrots, raw, 1 cup sliced
    * Green Beans (snap), 1 cup
    * Water, tap, 5 cup (8 fl oz)
    * White Rice, long grain, .25 cup
    * Chicken Thigh, 2 thigh, bone and skin removed


    Makes 5- 1.5 cup servings.

Directions

cube the chicken and brown it in the bottom of your soup pot. Add 5 cups of water, taco seasoning, two cans of diced tomato with green chili. Add in rice and bring to a boil. Once it boils set to simmer and add in the veggies (i use fresh but frozen works). Simmer until rice is cooked and serve.
