Chicken and vegetable sauce

Number of Servings: 6

Ingredients

    3 chicken breasts, cut up in cubes
    .5 cup raw onions
    1 cup chopped green peppers
    1 medium tomato, cut up
    1 can(2 cups) crushed pineapple, liquid reserved

    2 T light soy sauce
    2 T cornstarch
    .5 cup brown sugar
    .33 cup cider vinegar


Directions

Cook chicken breasts in pan until cooked through. Cut up into small chunks.
Ad onions, green peppers, tomato, and crushed pineapple.
Heat through until warm.

For sauce: Mix together reserved pineapple juice, soy sauce, vinegar, brown sugar and cornstarch.

Add sauce to chicken and vegetable mixture. Cook until sauce is hot and thickened.
Serve over brown rice.
