Purple cabbage cups

Introduction

Very delicious but low in fat & calories! Very delicious but low in fat & calories!
Number of Servings: 6

Ingredients

    8 oz of boneless, skinless porkloin (cut into cubes) - browned lightly
    1 Cup carrots, chopped
    1 cup celery, chopped
    1 cup portabella mushrooms, chopped
    1/4 cup chopped scallions
    6 tbs Kraft Roasted Red Pepper Italian Dressing
    6 large purple cabbage leaves (whole)
    salt & pepper to taste
    cumin to taste

Directions

Cut pork loin into cubes and lightly brown in sauce pan.
Remove and add in chopped carrots, celery, scallions, mushrooms, dressing & seasonings. Mix together well.

Seperate the cabbage leaves into 6 large cups and fill about half way with the mixture. Then fold together & secure with a couple of tooth picks. Lay into baking dish - brush with more of the Italian Dressing and then bake for 25-30 minutes (until cabbage is tender).
