Very quick and easy. From stove to table in about 10 minutes. Topped ours with crushed baked tortillas and about 2 TBSP fat free mexican blend cheese. Will be making this one again! - 7/12/10

I found how to make "refried beans" without the "fat"
I drain & rinse the canned beans [red, pinto, black] then mash them in a food processor then add seasoning
garlic. onion, chili powder, & salsa
then add the low fat sour cream
this can be used in a tortilla for an enchilada
    top cheese - 7/5/10

This was super easy, and because I love a little zing to my food, I added some extra Ro-tel and it was great! - 7/5/10

  • This was great and felt like comfort food! I used spicy Mexican style corn which gave the soup a nice crunch and added an extra can of diced green chiles for more flavor. I also added a bit of cumin because I love spice. Can't wait to eat the leftovers for lunch! - 8/5/14

  • This is a "pantry winner" soup. I had everything I needed in the pantry and fridge and it was so fast and easy to make for lunch that I didn't have time to grab the potato chips.
I didn't want the dreaded potato chips after a bowl of this super tasty soup. SAVED BY THE SOUP! Delicious! - 10/14/13

Minus the sour cream, this recipe is usually called Five Ingredient Soup. I add shredded leftover chicken white meat, chopped onions, a bit of chopped spinach, chili powder, cumin, cilantro, and any leftover salsa or picante sauce that may be taking up space in the frig. - 3/8/13

  • I really liked this. I used the Rotel tomatos with green chili which made it pleasantly spicy, but not too hot. I did not have sour cream and just left it out. I also used frozen corn. Its very filling and tasty. I also used ff, low sodium chicken broth. - 3/5/13

  • Dang was this good!
I added an extra can of refried beans so it would be thicker.
I also added cheese ad scallions on top like another reviewer suggested.
